Meatless Monday Dinner

It doesn't have to be Monday to go meatless at lunch or dinner. Whip up these high-protein, healthy burgers and if you have any leftovers, you've got lunch covered for the next day!
If you're not a mango fan, hummus or a tomato-based sauce are both great additions.

Ingredients
420g can five-bean mix, drained, rinsed
300g can butter beans, drained, rinsed
2 cups fresh white breadcrumbs
1 tablespoon Balti curry paste
1 egg, lightly beaten
1/4 cup coriander leaves, chopped
1 lemon, juiced
2 tablespoons olive oil
1 cup thick Greek-style natural yoghurt
1 tablespoon mango chutney
6 iceberg lettuce leaves, finely shredded
4 multi-grain bread rolls, split, toasted
2 tomatoes, sliced
Step 1
Place all beans into a food processor. Pulse until beans are roughly chopped. Transfer to a large bowl. Add 1 cup of breadcrumbs, curry paste, egg, coriander, 2 tablespoons lemon juice, and salt and pepper. Stir until well combined.
Step 2
Form mixture into 4 patties. Coat patties in remaining breadcrumbs. Place onto a plate. Cover with plastic wrap and refrigerate for 30 minutes.
Step 3
Preheat oven to 160°C. Heat oil in a non-stick frying pan over medium heat. Cook patties, 2 at a time, for 3 to 4 minutes each side or until golden and cooked through. Keep warm in oven while cooking remaining 2 patties.
Step 4
Combine yoghurt and chutney in a small bowl.
Step 5
Divide lettuce between roll bases. Top with tomatoes, patties and a dollop of the mango yoghurt. Cover with roll tops. Serve.
